Banana Cake

Bananas: rich in Vitamin B6 and C, potassium. Potassium is beneficial in soothing and preventing stomach ulcers, it also helps regulate our fluids balances.

Banana Cake

Ingredients

Makes 6/8 portions

280 gm. self-raising flour

125 gm. Butter

1 tsp bicarbonate of soda

2 eggs

175 gm. unrefined caster sugar

125 ml milk

3 ripe bananas (mashed)

1 tsp. vanilla extract

 

Method

Preheat the oven to 180/190 C – Gas 4. Grease and line a 25x11cm loaf tin.

Beat the eggs with the sugar and soft butter until creamy. Add the flour and bicarbonate of soda alternating it with the milk and mix well together. Fold in the bananas and vanilla extract then pour the mixture into the tin.

Bake in the middle of the oven for 50 minutes to 1 hour until a skewer inserted in the middle comes out clean and dry. Once cooked let it rest in the tin for about 10 minutes.
